She shares how she created one of the nation’s first “Farm Restaurants” – her first Primo restaurants is on a farm that supplies most of her ingredients. She opened Primo, a restaurant on a farm in Rockland, Maine 15 years ago and it lead to two more successful restaurants in JW Marriotts in Orlando and Tuscon. At the ICCA Summit you will also learn about very unique ingredients like when we learned about kelp farming from Paul Dobbins, President of Ocean Approved the largest kelp farm in the USA.
