The ICCA and GCIA board of directors decided to combine their largest educational event of the year due to the COVID-19 pandemic. They choose locations that will help showcase unique ideas for you to take back to your team helping to make your company more successful in the future. Our goal is to find Portland’s unique elements that will inspire new menu ideas and the resources to execute them. From the award winning chefs in one of the most creative culinary destinations to the leading trend experts, the educational programs at our upcoming 18th Annual ICCA Summit & 7th Annual GCIA Culinary Combine Portland are unmatched for new menu developers from some of the fastest growing chains in the world. We chose The Nines Hotel, where 2020 Top Chef contestant and nominee for 2019 James Beard Best Chef Northwest Gregory Gourdet is the Director of Culinary Operations at Departure Restaurant. This is where you will enjoy their rooftop view of downtown Portland while you experience his creative seafood, sushi and other featured dishes. We are so excited to share the vision we have for our 18th Annual ICCA Summit in Portland, Oregon. Portland is one of the most creative and unique culinary destinations in the nation and the Northwest United States helps showcase how to attract today’s diverse customer base and make them all happy. From the casual/affordable chef-owned restaurants to the still exploding food card scene Portland is a hotbed for new menu ideas. During the 18th Annual ICCA Summit you will not only dine in many of these restaurants, but you will also meet the genius chefs behind the scenes and hear from them what is working and why. Best of all the cost is only $395 for your membership if you sign up now. This means your $595 registration fee is waved for all members and potential members who register for the 18th Annual ICCA Summit.
Portland is home to one of the nation’s first microbrewery restaurants Rogue Distillery and Public House and it is still in operation in downtown Portland. Our event will feature the most amazing leading-edge restaurants, best local beers, a tour of distillery row and of course tours and tasting of Willamette Valley’s award winning wines. Many of the industry leaders who have made the ICCA a leading-edge network for new menu developers will also be in Portland to share their experience with you. Adam Sappington, who will also be joined by his pastry chef wife Jackie as our closing demonstrators on Tuesday afternoon will share their creative ideas that lead to appearances on Diners-Drive-Ins and Dives, ABC’s The Chew and Chopped where the couple were winners.
The leading chefs are raking in the awards from James Beard Foundation, Food & Wine, Bon Appetit and many others. Le Pigeon Chef-owner Gabriel Rucker, Rising Star Chef in 2011 and Best Chef Northwest in 2013, also opened Little Bird, a larger and equally awesome casual restaurant featuring everything from fresh Pacific Northwest oysters to Chicken-Fried Trout. He was again nominated for the JBF Best New Restaurant this year for his newest venture Canard and also outstanding chef again for Le Pigeon. Greg Higgins began working with local farmers way before anyone even thought about farm-to-table and he is still the foremost leader in the movement in the Northwest. His restaurant Higgins was the first to actually work with the local farmers on seasonal crop that they planted together as a partnership. Other notable chefs include Naomi Pomeroy, chef/owner of Beast and Expatriate, JBF nominee for Outstanding Bar Program this year; Jose Chesa, chef/owner of Ataula and the soon to open Mesia is a multiple JBF nominee for Best Chef Northwest; Vitaly Paley, James Beard Foundation (JBF) Best Chef Northwest in 2005 and Outstanding Chef in 2013 is owner of Paley Place, Imperial Restaurant, Headwaters and the recently opened Rosa Rosa; Andy Ricker, JBF Best Chef 2011, was the owner of one Pok Pok in Portland during our last event there. He now has added Pok Pok locations in LA and New York, where he was awarded a Michelen Star in 2015. All of these restaurants will be a part of our Dine-around restaurant series where members dine each night compliments of our sponsors. the top restaurants and other points of interest for you to enjoy while visiting Portland during our GCIA Culinary Combine.
Our Culinary Road Trips will of course include visiting the top wineries in the Willamette Valley that also includes a coffee crawl with some of the most creative coffee roasters in the country. That is just a hint of the amazing places in this beautiful region of the country you can choose to see. There will be a trip to the Columbia River Gorge that includes witnessing the Bonneville Dam Salmon Ladder, and a fair trade coffee plant – an amazing opportunity to experience a coffee cupping.
