CLIMALUX controls humidity precisely and continuously, Adaptive Cooking senses the loads that are being cooked and automatically adapts the recipe settings to provide repeatable results regardless of food volume, AUTO.Soft allows for gradual increase in temperature used for precision and delicacy, Smart Preheating heats the air and steel inside the cavity and takes into consideration previous cooking programs for existing heat, ROTOR.Klean automatic washing system, and SENSE.KLean estimates the cleaning level needed based off of recipes to help reduce detergent and energy use.
Data Driven Cooking website and app are available for equipment registered and connected via internet or ethernet.
US Product Line:
ChefTop Mind.Maps Plus – combi oven combining convection, steam, and humidity extraction. Available in 6 sizes, most with the option of a “ventless hood”. In comparison to other combi options in the local market: we typically have a smaller footprint for comparable cavity size, see a significant cost savings on initial investment and annual maintenance costs as well as see a huge savings on cleaning product, utilities, and time.
EVEREO + Hot Vacuum Pump – “Hot is the New Cold” – food preservation at service temperature, effectively allowing for an energy efficient way to cook and serve without the traditional cook-chill-regen-serve process. Combining the patented Hot Vacuum Pump with the EVEREO allows some food items to be preserved at service temperature for up to 72hrs eliminating the need for refrigeration and the retherming process.
BakerLux SPEED.Pro – speed oven combining convection, conduction, and microwave cooking. Reduces equipment footprint and increases production.

2019 – DDC “Data Driven Cooking” – This user friendly software monitors oven usage, cooking times, menu items, energy and water usage, etc… Easily accessed via web or smartphone app. Artificial Intelligence uses the collected data to recommend operational patterns, recipes, etc… Internal oven sensors calculate volume and mass to automatically adjust cooking times for various batch sizes.
2020 – EVEREO – a revolutionary food preservation technology combining the quality of Slow Food with the efficiency of Fast Service.
2021 – MULTI.Day HOT VACUUM – this patented technology allows you to store hot food in MULTI.Day trays and either preserve in the EVEREO or transport it to satellite locations without the risk of spills or contamination.
