The 7th Annual ICCA Summit has been designed by the ICCA board of directors to address the challenging economic conditions we face this year. We have invited some of the nation’s top economists, leading marketing research firms and experts in new underutilized cuts of pork. We will also have an unveiling of some of the new teachings for the Culinary Institute of America campus in San Antonio plus regional chefs featuring urban Western cuisine, Latin influenced cooking and of course barbecue.
