ICCA members will have an opportunity to spend two action-packed days exploring Colorado’s Front Range foraging mushrooms, visiting organic farms and learning from the most successful chef-owner restaurateurs in the state. ICCA Culinary Immersions began last year during our 10th Anniversary and have been a huge success. The event is limited to only 15 members on a first-come-first-serve basis. All expenses are paid except for your airfare. From the time you land at Denver International Airport, ICCA will provide all transportation, rooms at the historic Brown Palace Hotel and all meals and tastings. The chef-owners will offer their insight into the Colorado consumers and the movement toward healthier menu items. Denver is one of the fittest states in the USA in a study by Trust for America’s Health. The study titled, “How Obesity Threatens America’s Future” found Colorado’s adult obesity rate at 19.1 percent, the only nation below 20 percent. These roundtable discussions include Frank Bonanno, owner of ten restaurants including Mizuna, Osteria Marco, Luca, Bones and Smokehouse. Another chef who will share her success is Jennifer Jasinski, chef-owner of Rioja and Euclid Hall Bar & Kitchen plus she is also a competitor on Top Chef Masters this season.
